Ings:
6 Eggs
Potato (steamed, diced)
mushroom (dice)
spinach (chopped)
Cotto Salami (cut into small pieces or as desired)
onion (dice)
black pepper
Mozzarella cheese (grated)
garlic w/ parsley
salt
Procedure:
1. Preheat oven to 350 degree F.
2. Heat cooking oil in pan. Saute onion then place diced mushroom and add a little bit of salt and black pepper to taste.
3. In a large bowl, mix together eggs,1/2 of cotto salami, steamed potato, black pepper, garlic w/ parsley, salt, spinach and the onion w/ mushroom.
3. Pour the mixture in a baking pan or any oven safe container. Sprinkle Mozzarella cheese.
4. Bake for 30-40 minutes. Then sprinkle the remaining cotto salami on top.
5. You can serve it with fruits. No need to prepare sides, coz it has already potato that makes this a one-dish meal.
